Lion's Mane Tacos

These Lion’s Mane Mushroom tacos were amazing! It was the first time trying them and I decided to prepare them super simple, yet brightening them up with some hot avocado salsa and a squeeze of lime, just like I like crab tacos. They definitely have texture and crab like taste. Enjoy!

Lion's Mane Mushroom

INGREDIENTS

TACOS
Lion’s Mane Mushroom ( a medium will yield 2 tacos)
1/4 red onion roughly chopped
2 tbsp of unsalted butter
½ fresh jalapeño sliced

SALSA

1 large avocado
• 1 serrano pepper
• 1/2 habanero
• 4 tomatillos (husked)
• 1/4 white onion
• Salt to taste

GARNISHES

Mayonnaise
• Limes
• Chopped Cilantro

DIRECTIONS

Start by making your salsa, combine all your ingredients in a blender (you can also deseed your peppers or modify type of peppers depending on preferred heat). Add water about 1/2 cup little by little to ensure that it purees well. You want salsa consistency not guacamole. Next add salt to taste, mix well and its ready. You can add lime juice to help prevent browning.

Next, slice your mane mushroom about 1 inch thick. Heat up your butter in medium high and add your mushrooms, onion and jalapeños - saute until golden, about 2 minutes per side.

I used Yoli’s red corn tortillas, I heated them up on a high heat comal with a little of butter. Then you are ready to assemble. Set your warm tortilla, add about 1/2 teaspoon of mayonnaise then place your mushroom mix. Drizzle hot avocado salsa and sprinkle cilantro. Serve with lime wedges.
