Fried Chicken and Okra Tacos

As soon as the fresh okra hits the market, Mark wants to make some fried okra. You’d think he was from the South lol with how much he loves it and green beans…but no, just another KC guy that loves okra. I made it for lunch and I ended up making it into tacos for a bit of twist. You could leave the chicken out for a vegetarian option.

Fried Chicken and Okra Tacos

Serves 4




• 1 lb of chicken thighs
• 1/2 cup of light soy sauce
• ¼ cup of honey
• ¼ cup olive oil
• 3 garlic cloves finely chopped
• 3 tablespoons of finely chopped ginger
• 3 tablespoons of lime juice
• 1 tbsp of chili flakes
• 2 cup of flour
• ¼ cup corn starch
• 3 cups of buttermilk
• 2 eggs
• Season with pepper after frying

1 lb of okra
1 cup of buttermilk
½ cup of flour
½ cup of cornmeal
¼ cup of cornstarch
1 tbsp salt
Vegetable oil for deep frying

• Tomato
• 1 habanero
• ¼ onion
• 1 garlic
• 1 tbs of apple vinegar
• 1 tsp salt
• 1 tsp sugar

• Shredded lettuce
• Queso Cotija
• Chopped white onion
• Chives
• Sliced avocados

Start by combining soy sauce, honey, garlic, ginger, olive oil, chili flakes and lime juice. Whisk and add to the chicken to marinate. Ideally 4-6 hours or overnight. After marinating, drain and pat dry. Set up your assembly line:

Combine flour and corn starch in a plate.

Beat the eggs and have it in a separate plate.

Pour the buttermilk in another plate.

Heat up your oil at 350-375 (I prefer 375). Once your oil is ready – get your chicken ready – 2 /3 at a time.

Pass your chicken in the egg, then place in the flour mix. Dust off excess and set a side (leave it for 5 – 10 minutes like that). Keep on prepping all your chicken up to egg / flour.

In the meantime, while you wait cut your okra in 2 inch piece. Place in a bowl and pour over buttermilk. Mix and set in the refrigerator.

Next, pass your floured chicken through buttermilk and then place in the flour mix. Make sure you pinch to create texture and make sure it’s completely covered (no wet spots should remain). Now you are ready to place in the fryer. You will cook them for 6 -8 minutes depending on your fryer. Make sure its golden brown.

Once you are done with your chicken it’s time to get your okra going. Combine flour, corn meal, corn starch and salt in a plate. Drain your okra and roll through the flour mix to coat evenly. Place your okra in the hot oil (375) and fry in batches. Set aside.

Get your lettuce ready and all your garnishes.

Put all the items in the blender and pulse until smooth. Set aside.

Heat up your tortilla in high heat, place in a plate and add lettuce. Then add fried chicken (in slices), top with okra. Then add your avocados, salsa and sprinkle cotija and chives. Enjoy!
