Hatch Chile Mussels

It’s the end of August and Hatch Chiles are making their way in…my gosh there are no words to describe how much I love these chiles! I buy the big roasted packs from Whole Foods and sometimes I simply take one or two out and squeeze lime, salt and just eat them! I made this as side dish for my oyster tacos, but they could really be an appetizer, or a main meal served with some fresh tortillas. Hope you get to make these, provecho!


Serves 6 as an appetizer / side dish



2 lbs of mussels

8 medium to hot Hatch Chiles roasted, rinsed and tops off

½ white onion

2 garlic cloves

1 tomato

2 8ounce clam juice bottle

Salt to taste

½ stick of unsalted butter

• Chopped scallions
• Avocado Oil
• Lime Wedges



In a blender, mix in your hatch chiles, ½ onion, peeled garlic and tomato. Blend until completely smooth. In a Dutch oven, melt your butter and add your hatch chile mix. Cook for about 10 minutes and then add your clam juice. Let it simmer for another 10-20 minutes. Salt to taste. Now add your mussels and cover in a high simmer… Your mussels will be done in about 3 -5 minutes. Serve immediately, garnish with chopped scallions and drizzle some avocado oil. Serve with corn tortillas.
