Unfork the Planet
Taking care of the earth is one of Yoli’s core values. Last year, on Earth Day, we shared Yoli’s partnership with Zero Foodprint, donating to their climate grants from sales at Yoli Westside. Over the holiday season, we donated to ZFP for every jar of Taco Stand and beanie sold in store and online. This week we’re teaming up with ZFP to Unfork the Planet. From April 22 - 26 at Yoli Westside, we will donate $1 from every Chicken Tinga burrito to Zero Foodprint. Zero Foodprint is a non-profit organization that makes it easy - and tasty - to restore the climate. ZFP pools contributions from restaurants and eaters, then gives farmers grants to transition to climate restorative practices.
Why the Chicken Tinga Burrito?
Part of Yoli’s commitment to the environment is sourcing ingredients we feel good about using from producers that care for the earth as much as we do. From Midwestern corn and wheat for our tortillas to seasonal vegetables grown locally, we are thoughtful about the ingredients we use to prepare everything from Yoli. The Chicken Tinga Burrito is no different. We source our chicken from Campo Lindo Farms in Lathrop, Missouri. Campo Lindo’s free-range chickens are fed non-GMO grains with no antibiotics. Through every step of the process Campo Lindo is dedicated to caring for their chickens. Campo Lindo says you can taste the difference - and we agree. We braise the chicken in a smoky tomato sauce to create a deep, rich flavor with just a touch of spice.
We also use Rancho Gordo beans in our Chicken Tinga Burrito. Rancho Gordo is as passionate about beans as we are! They work with growers in California, Oregon, Washington and New Mexico. Through their Rancho Gordo-Xoxoc Project they also work with small farms in Mexico to source very rare crops. Thier flagship bean, the Rio Zape is featured throughout our Yoli Westside menu for a reason - it’s like a pinto bean but with a bit more complexity and a beautiful texture that works perfectly in our dishes. We finish the burrito with arroz rojo, caramelized onions and a salsa roja.
It is our hope you can always feel good when you eat something from Yoli, knowing how carefully we source our ingredients and the care that goes into the preparation of each ingredient. This week we hope you can feel a little extra good knowing that your burrito will support farmers working to regenerate the soil and take care of the climate.
