Yellow corn is mild in flavor, and it yields a stronger tortilla.

Red corn has a sweetness at the end, and it yields a beautiful burgundy color tortilla.
It goes great with steak tacos and vegetables such as eggplant.
Blue corn has an earthiness to it.
It pairs well with Oaxacan cheese, sautéed zucchini, mushrooms, etc.

how to heat tortillas
Place tortillas on a pre-heated comal or pan over high heat.
Heat for 10-20 seconds per side or until soft and warm.
If the tortillas smell toasty, with a few browned spots, you're doing it right.
